Hilda -- the snack before bedtime has helped all of us here (we're all Type 2) so hopefully it will help you also.

My fasting blood sugar this morning was: 108 .... evening 72. Great day for me!!!

I rode 25 miles on the bike before lunch, at lunch, took a walk, ate dinner, took a walk.....very good day for me today!!!

I won't be testing again until Wednesday -- since I'm back in keotsis and am back to the weight I was before the accident I'm going to go back to the 3 times a week testing now.

I just looked at that picture above and the first thing that came to mind was "that's W A Y too much food for 1 meal and for 1 person"......I really need to rethink my meals -- I think I'm eating too much.

Saturday -- what a great day!! I was able to sleep in a little after 2 storms came through during the night.....

Fasting blood sugar 114 -- evening 76 (a little low -- getting the "fuzzy" eyes so I made a portion of pumpkin desert -- that normally helps bring my glucose up a little faster).

I rode 15 miles on the bike today -- taking it a little easier, but we've already taken Sadie for 1 walk and are going to take her for another later tonight.

Breakfast was 2 scrambled eggs with a 1/2oz of colored peppers and 1/2oz of onion, 1 tsp salsa and a slice of deluxe cheese melted on top. A cup of coffee and 32oz water.

Lunch was 1tsp Hellmans, 1tsp low carb ketchup and 1tsp s/f relish mixed together and spread on 2 slices deli ham then rolled up with lettuce inside, 1 serving of mock-a-roni & cheese and 1 slice of tomato from the garden, 32oz water.

Snack: pumpkin desert

Dinner: nathan's hot dog, same spread as above, fried radishes and broccoli. 32oz water.

I'll drink at least 32 oz of water before I go to bed.

Carole, I read your menu and somehow I feel I am not eating enough.--------

Breakfast, 1 pork sausage patti, 1 serving crustless quiche (atkin recipe). 32 oz water, 1 decaf with stivia and drop of heavy cream.
Lunch, Tuna salad with lots of celery, cabbage coleslaw with mayo, 32 oz water and 4-5 pork rinds with 2 tbls sour cream with onion flakes.
Dinner was roasted chicken breast 6 oz, 1/2 cup coleslaw, 1 cup summer squash baked with grated swiss cheese and butter.

dessert was 2 eggs with 1 tbls heavy cream, 2 tbls cream cheese and baked in microwave for 2 min.

My sugar at night was 76 so I added 1 tsp of peanut butter to get it where I could have my night insulin. It only went to 86 but that was ok for my 25 units of lantus.

If there are any suggestions for me and if you think there is something I can add or delete, I will be open to anything. My weight has not changed even after vacation. I was keeping to the plan and I guess it worked.

I have been pushing the water and hope it helps. 7 - 16 oz glasses today.

Default Re: My name is Carole and I have Type 2 diabetes

Today has been a rushing nightmare -- I'm just glad it's after dinner and no one has to go anywhere or do anything else today - I'm beat!

I got up this morning, had lower blood sugar than normal - it was 80 so I've been fighting to keep it up all day - Took the hubs to work before I are breakfast then I took my morning meds - mowed the lawn, rode the bike and got my other daily exercises done - then took a shower and started a load of laundry - all before noon.

We were suppose to go to the laundromat to wash & dry bedspreads but got a call from my brother and by the time we hung up with him and made lunch it was too late to go. Mom had an eye surgeon appointment at 2:15 so we got there and they said her appointment was somehow cancelled but they would "squeeze her in". We pulled into the drive at 4:45 -- I was suppose to pick up the hubs at 5:00 so I was late. Called him and said I had to eat something on the way home from the doctor because I was having fuzzy eyes (low blood sugar) -- I ate 2 oz of chicken and 2 ounces of red pepper and took my blood sugar at 5:00 and it was 76. Got back in the car and went to pick him up ........got home and made dinner - it was an easy night....we had ham/eggs and I made legal pancakes for me (they had real pancakes). I normally have 2 eggs a day -- I had 5 today!!! I hope I don't wake up clucking with feathers and wings!!!!!

I'm going to go to bed early tonight -- I didn't sleep well last night, I laid there and tossed for about 2 hours then fell asleep but woke up 3 times during the night - I guess I needed to know what time it was because the first thing I did when I woke up was checked the time.....guess I didn't want to be late for waking up to the alarm! LOL

Tomorrow the hubs works from home so there won't be any of this running around like today. Since we didn't get to the laundromat today we'll go tomorrow. Mom wants to go somewhere and look for a new winter coat (in July!!!!!) so we'll have to try and find some place with coats out this time of year! Maybe we'll drive in to St. Louis and go to Burlington Coat Factory...the one out here they closed and it's now a sports park -- they don't sell coats....lol.

Have a great Atkins day.

Audrey, how much fat are you getting in each day? I've gotten to the point where I put some type of fat on everything. I cook my eggs in a Tbsl of oil and 1 pat of butter then when I get ready to eat the eggs I add a pat of butter to the top (I normally have an omelet for breakfast - 2 eggs, onion, pepper, cheese & salsa -- but i melt a pat of butter on top of the eggs when I fold them over to make the omelet.

For lunch today I had a "BLT" -- I took a leaf of iceberg lettuce and smeared Hellman's mayo on it (thick), had 1-1/2 slices of tomato and 3 slices of bacon then rolled the lettuce leaf up.

Dinner was 3 legal pancakes (3oz cream cheese & 2 eggs) smeared with melted butter, 1 egg on the side, 3 oz ham steak and sugar free syrup to dip the pancakes in.

Before I started making sure I was having enough fat daily I wasn't loosing anything -- of course I loose to painfully slow it's not funny but I did manage to loose a pound in a week - that's something for me!

Also, I notice when I use cream I don't loose anything -- I love it and use it in 1 or 2 cups of decaf but most times now I'm trying to drink my coffee black.

What you should do is post your menu on the "Rate My Menu" area and see if Megs or Georgiana can figure out what you should do -- I'm not a good reference because I am having trouble figuring out what I should be doing.

Carole, sounds like you had a busy day. My sugars are starting to come up low. 75-85 at night. My AM sugars come in high about 125 -135. If I take insulin I can get my morning sugars down to 100 or so. I have to tell you that if I eat anything illegal, my sugar goes crazy.

My Hubby and I go to lunch almost 3-4 times a week. He does not have a weight problem. Today we ate at Denny's, it is a good clean place here in Burlington. I get the steak salad which has asorted greens and about 6 oz of filet steak grilled, with blue cheese. I always order just water and drink about 2-3 glasses. That is usually what I order at lunch out. Uno's has a great cheese burger with LTO and lots of mayo. Sometimes we eat at TGIF's and I get the flat Iron steak with lots of broccoli or squash. It is hard to order out but it has been working in my favor LOL. When we eat lunch home, it is the tuna or salmon with celery and mayo and homemade coleslaw. My portions are about 1/2 to 1 cup of everything.

Dinner at night is usually a meat, veggie, salad or coleslaw and I do love the butter and olive oil. Most of my cooking is done with olive oil. Breakfast is always eggs with ham or bacon, sometimes I treat myself to the crustless quiche which I make up once a week and put in the freezer in 1 serving size.

I do scramble eggs with mayo. Sometimes I mix cream cheese, 2 eggs with a little cream (vanilla makes it like a dessert)and that will bring my sugar up a little at night.

I must be tired because I seem to rambling on again. Have a great night and I hope you sleep tight tonight. Audrey
