I'm in the middle of a big move and living out of boxes. We got totally screwed by the truck rental company and had to spend three days moving instead of one. Now we're moved in, which I'm so thankful for. But the boxes and the mess are overwhelming, and I can't find things I need. We haven't been able to unpack the microwave or any pots or pans yet. (Yes, we got the bed set up, thankfully! And had to set up the computer for the cable guy). So I've got the fridge and the oven with tinfoil on a rack to work with. Needless to say my diet for the past few days has been less than ideal.

First while waiting for the moving truck problems to be sorted out I found myself nibbling on cheese throughout the day in response to my frustration and need to do something, anything. Obviously by that point I was already limited with everything packed. I'd hard boiled some eggs to get me through what was supposed to be moving day. But since it got extended two more days I was really stuck. So cheese became a fairly regular snack since it was about all we had around. Not that I really had that much. In fact I probably didn't eat enough actual calories over the past few days because I was just too busy. But I didn't get enough veggies in, and rarely had the oportunity to have any real meat. Since we have arrived in the new town I've been living mainly on meat slices (pepper ham and roast beef) from the deli. I'm so sick of them, even though they have been quite tasty. I also picked up some celery and have a bit of letuce, as well as some artichoke dip that is quite low carb. But this is not a good diet. I've also kept some Atkins snacks around, which I don't like to eat so often. But being so busy and having no way to prepare much, it's really been my only option.

Now, for me, I don't have a problem with binging on non-Atkins-friendly foods. No sugars, no starches, no problem. But right now keeping a nice healthy balance and feeling decent is really hard. My guts have also been messed up for some time now regardless of what I eat. Pretty sure that's just the stress. Because of that I just can't bring myself to eat any eggs right now. They're just too much for my system in this state.

But I tell ya it's just maddening right now. I feel like I'm going to scream or cry or something for whatever reason and the only thing I can think to do is head for the fridge. But nothing in there really to take the edge off and I'm so sick of cheese! Normally if I'm having a little emotional thing, (and it's a reasonable time for a snack anyway), a couple of deviled eggs do just fine. Or sometimes a little coconut oil treat or whatever. But right now my options are limited and I'm so frustrated. I know blood sugar plays a part here, as often just taking the time to eat will help get me balanced again. But what to eat??

I know in a week or two I will be feeling better as we'll be at least mostly set up and I'll be able to cook properly, etc. But right now I'm a mess!!

Anyway, going shopping in a bit and will try to find some things that will get me through the next few days. DH is just fine with his mini frozen pizzas and potato salad of course.

Maybe you could go to a thrift store and buy a cheap fry pan until you find yours. Moving is stressful in the best of circumstances at least it gives lots of opportunity for exercise. hehe
Have you gotten out of the new place at all, gone for a walk? a drive? I have to take big projects a little at a time or I feel swamped.

Thank you for your kind words. Hehe, I guess I didn't really expect anyone to read my post. I was PMSing and hungry! lol.

We have got the kitchen somewhat functional now and I've been able to cook some meat. So things have drastically improved there.

I am, however quite frustrated with the current rung of Atkins I'm on, so I've decided to jump to the last rung. That means that I now have to cut all eggs and dairy out of my diet to allow for some occasional grains or even (gasp!) sugars. Can't have them in combination with my stomach problems. It's either dairy & eggs, OR higher carb foods, that's it. I just have too many situations where the diet really messes things up, and I've had enough. I refuse to turn down any more dinner invitations, seminars, etc. I have been keeping with it for the health benefits, since I don't lose weight on any diet. So I'm going to stop counting carbs and being so restrictive. BUT I'm still going to avoid grains and sugars in my regular diet, except for when I'm at a function or dinner or whatever. And even then, will still be careful. But I'm increasing my veggies (mostly greens, but not salad veggies), and fruit as well. That will allow me a lot more freedom than I've had so far and should keep my weight fairly stable. Actually I'm quite happy that I managed to find a sugar free soy milk at the store. That can be quite hard to find. I will miss real cream in my coffee or tea. But that's OK. I never minded the soy, really. And I'm still hoping to use some of the recipes I've found here now and then. OH, and I'm so happy to have found the flavoured liquid stevia's at the store. I plan to use them as my primary sweetiner as I've come to enjoy them much more than any other sweetiner, including sugar.
