Not only is it yummy, it's filling and goes extremely well with a cup of hot tea.  *sigh*</div>

My biggest problem for the three weeks I've been living this low carb lifestyle has been what to snack on. This has been especially important since I've discovered that, eating this way, I don't - or can't - eat nearly as much as what use to be normal. So sometimes I do get a bit hungry between meals, not always, but at times I do. <br />
I am constantly searching for new snack foods, and today something just popped into my mind that sounded delicious. So I made a run to the supermarket to get what I needed. It' so simple really, but was it ever good. <br />
 <br />
I took some Pepper Jack Pimento Cheese, added about the same amount of sour cream, and just a tad of mayonnaise for that extra, salty taste, and mixed it all together. Then I took several long lettuce leafs and spread the mixture thinly on the leafs, then just rolled them up into little logs. I stuck a toothpick through the center to hold them together, and took them to my desk - and totally enjoyed my afternoon snack. <br />

3 0z. mozzarella cheese (divided into 3 parts) 
strips of cooked chicken breast 
strips of green bell pepper...]]></description>

<b>:heartbeatOLivia's cheesy chicken roll ups</b><br />
<br />
3 0z. mozzarella cheese (divided into 3 parts)<br />
strips of cooked chicken breast<br />
strips of green bell pepper<br />
pinch of chili powder<br />
<br />
1. fry the mozzarella cheese on low heat till it bubbles, spreading it thinly with a spoon to a size of a small pancake.<br />
2. put some strips of chicken, a strip of green pepper and a pinch of chili powder on one side.<br />
3. when edges start to brown, and can be handled with a spoon, slowly roll the filled edge to the other side forming a flute.<br />
Enjoy with an induction friendly garlic sour cream dip.<br />

1/2 c. cream<br />
1 tsp. vinegar<br />
1 small clove pounded garlic<br />
a pinch of chili powder<br />
<br />
mix well. serve with cheesy chicken roll ups<br />
