I was thinking through some of the meals I used to make, and one of them was chicken and broccoli fettucini alfredo... and I realized my recipe for alfredo sauce is atkins friendly... and I think I'm going to make this for dinner this weekend (without the fettucini, obviously). So here is the alfredo recipe:

1 pint container of heavy cream
1 stick of butter
3 or 4 cups shredded parmesean cheese

Melt the butter in a sauce pan, then add the container of cream. Warm to boiling, then turn temp down slightly and add the parmesean cheese a hadful at a time, making sure the cheese is melted before adding another handful. Its a bit time-consuming, but the result is delicious! Season as you'd like (I usually add some minced garlic once its done... tastes just like Olive Garden Alfredo). Just pay attention to how much you're eating - its so good you could lose track! 8)
