cauliflower Question

Raw shredded cauliflower...

Can it be frozen? Best to freeze on a cookie sheet/flash freeze? Can it be reused as rice or will it retain too much water, be soggy and end up having to use as a filler, moc potatoes and such? If it can be frozen and reused as rice... do I let it thaw in the fridge or can I just cook it frozen without adding extra water? Thanks in advance!! I love faux rice, but with hubby deployed, I can only eat so much of it by myself!

Dr. Atkins never said the vegetables had to be picked off the farm 10 minutes before you eat it. So the vegetables may be frozen, canned, dried, etc.

There are some veggies that need to be blanched before freezing, I'm not sure if cauliflower is one of them. You might want to google "cauliflower, how to freeze" and see what that will bring to you.
