| There's a great variation of Eggs Benedict where the egg is served on slices of tomato instead of an English muffin. I've got to try that before there aren't any fresh local tomatoes around.

| I eat eggs more often for lunch or supper than I do for breakfast. In addition to the Eggs Benedict on a tomato, try it on a bed of steammed spinach tossed with butter and garlic, or sauteed zucchini or eggplant, etc. I like fried eggs (over easy) on top of a wilted salad with bacon dressing. Or fried eggs over steamed asparagus or fried eggs over sauted mushrooms and onions. I also like scrambled eggs with tomatoes, scrambled eggs with smoke salmon and asparagus, scrambled eggs with stewed eggplant, etc. Fritattas are nice because it's a good way to use up leftovers---just chop whatever leftover meat and veggies you have mix in the beaten eggs, pour into a skillet, cook gently and flip. Frittattas also travel well for lunch at the office. One of my favorite treats is an egg foo yung: beat an egg or two, add mung bean sprouts, chopped cooked pork chicken or shrimp. Then heat up a skillet add oil and cook like you would the frittatta.

| I almost forgot---hard boiled eggs! I cut them into quarters, and sprinkle them with a combo of heavy cream and cheese. Then pop into the oven until they are hot and the cheese is melted. And of course, devilled or stuffed eggs---I can make an entire meal out of them and a veggie side dish.

| Eggs are a mainstay for me! And I don't need them to be fancy, just a fried one with bacon for breakfast, egg salad for lunch and a hard boiled one cut up in a salad for dinner. Yay, eggs!!! |
