| For pumpkin puree, I just go to the store and buy a can of it. Make sure it says "100% pumpkin" and not "pumpkin pie mix". When I have a real pumpkin, I either make pumpkin chips following this recipe http://www.atkinsdietbulletinboard.c...ion-legal.html (Snack chips--Induction Legal) or I peel and slice the pumpkin into 1/4 inch pieces and layer them with a mixture of cooked ground beef, tomato and herbs and spices, and bake it for a pumpkin lasagna.

| you can drain it in a collander, or squeeze out water through a double layer of cheesecloth. Save the watery stuff for soup. |

| I just recently made puree from two pumpkins I got at the farmer's market. I chose to bake mine and it turned out great. I cut the pumpkin in six pieces (leaving on the skin), scraping out the seeds and fiber. Put it in a roasting pan with a lid. I put about 1/2 cup of water in the bottom. I baked it at 350°F for 90 minutes. I removed it from the oven and let cool until it was cool enough to handle. Then I took a stainless steel serving spoon and scooped the pulp off the rind/skin and put it in a wide bowl. Then I just mashed it with a potato masher. It worked like a charm. I hate to wash my blender or food processor, so the old fashioned hand masher was the best choice.
