I know this is anticipating the season by just a bit but I need some ideas that I can try out on my family before we head out in the canoe and the tent. Most wilderness cookbook are awesome but tend to be carb heavy. Our typical menu has been oatmeal for breakfast, soup, hotdogs and / or sandwiches for lunch- trailmix / fruit for snacks and pasta / potatoes / rice for dinner. Pretty healthy in the scheme of things- but I need some ( no refridgeration) ideas that would increase the veggies and take out some of the carbs. We do dehydrate veggies and sauces. I haven't dehydrated meat because of the fat content- but I'm willing to give it a shot. Bear in mind- this is a packing issue too- e.g. I LOVE eggs for breakfast- no one else in my family will eat them- same goes for tuna- I love them( my family that is)- but they can be difficult I know I'm going to be upping the carbs while camping- but I don't want to lose perspective- if you know what I mean.
Any suggestions?????

Some fresh veggies can last without refrigeration, provided they are left whole, such as tomatoes, sweet peppers, cucumbers, cabbage, onion, and celery.

If you look in the "Low CArb Menues" forum there is a thread or two about camping.

Also, you might want to move to On-Going Weight Loss Phase, rather than stay on Induction. Moving to OWL will allow you to eat a greater variety of foods and a greater amount of carbs. Staying on Induction doesn't have any real benefit.

So there is both weight and space concerns? Can you eat oatmeal? Your profile says OWL 3 maybe by the time you go you will have tried oatmeal. How about jerky? Have you tried making some? Revolution roll "buns" for sandwiches?
You can dry vegetables and use them to make soup. Nuts and seeds are very good for energy and snacks.
