| You probably broke the emulsion by adding too much oil or by not whisking quick enough. I think you can save it if you whisk another egg yolk and then add the "oily mayo" SLOWLY to it.

| You might have used too much oil. It's about a 1:1 ratio for egg yolks to oil. So if you use 1 egg yolk, you should use 1 cup (240 ml) of oil. And you might not have to add that entire amount.

| when your adding the oil to the egg, add it very slowly while whisking,., start out with a few drops at a time, then slowly add more and more... when you create an emulsion, then you can add more oil at a time

| My advice would be to use a blender or food processor. I just made some mayo for the first time the other day in the blender and it turned out yummy. Just make sure that you add the oil very slowly, like everyone else has said. |
