Default zucchini carb question

I know Zucchini has 5 grams per cup. What if I core the zucchini? What if I skin the zucchini? Do either matter? I assume a significant portion of the carbs are housed in the seeds in the middle.

I'm a big gardener and would love to be eating more of it. I currently core my cucumbers (thinking it reduced carbs). Any thoughts on that too??

Use the USDA Nutrient Database website. It typically gives options like "skinned", "Peeled", etc.

I'm not sure how many carbs teh seeds would have. However, I guess it would have more fiber---undigestible carbs---that it would digestible ones.

Anyhow, I love gardening too! I'm a small gardener, but I'm large enough to have already frozen 4 pounds of green beans! Join the Low Carb Garden Group, if you like. The link is in the sticky thread at the top of the forum.

No, it does not list skinned and says nothing about coring. Plus, I believe there are more carbs in the seeds than the meat, but I'm unsure. That's why I'm asking.

I think that trying to determine the exact break down of carbohydrates in a vegetable might be a bit obsessive compulsive. If you can't find specific carbohydrate information, I would go by the rule of thumb that all parts carry equal amounts of carbs and measure by volume or weight rather than parts.
