| Hi, great to see you here. :wave Not from the Bahamas but I can identify with the food issues. I am surrounded by rice and peas (beans and rice to you), plantains and such delights. I also found that on my visits to Nassau veggies were not in sight!! I do have lots of Caribbean Atkins Friendly recipes so let's party!! :icondance :icondance |

| Escoviched conch might be nice. Conch with vinagre, hot peppers, carrots and onions toss and served over a bed of thinly shredded cabbage. Curried conch with cauliflower "rice". Conch fritters with egg rather than flour as bonding agent. Low carb pizza with marinated conch. This is OWL friendly. I don't like soy flour alone so I mix with whole wheat flour or even baby cereal. This pizza recipe I got from food network's low carb 'n loving it show. "Sweet" and sour conch - use splenda, soy sauce, sesame seed oil, season to taste toss, serve over bean sprouts. |
