I love the mock danish occasionally too...the recipe I have used from here is one that has "icing"....I don't really have the proper recipes, but I can tell you approximates, and maybe if you do a search you will find the one I'm talking about....Brook had it posted at one time.....
"DANISH"
Mix 1 or 2 eggs (depending on how hungry you are, or if your having anything else with it...I usually use two)
Add 1/2 tsp of splenda
A good dash of cinnamon
1 TBS of cream cheese.....mix together (will be slightly "mealy" in texture)
Cook in Microwave, stirring once.......When it is cooked it usually stays into the form of the bowl you cook it in, so it is more like the shape of a real danish.

ICING
Slightly warm 1 TBS of Cream Cheese in MIC, then add 1/2 tsp of splenda, a drop or 2 of lemon, and cinnamon (to your taste preference)....
Mix well, and spread over "danish"......very yummy!....really tastes like one...
I often ommited the cream cheese in the egg, and used that amount in my "icing".....sometimes ya just need more icing!

I normally have Crustless Quiche as in the Atkins recipe book.
I love spinach and also it is so handy to have that for breaky as i only have to make one Quiche for me the whole week.

Once out of Induction I like the the recipe in the Atkins book for blueberry muffins. It is GREAT!!! Again only have to make it once a week. These muffins have proved to be great for those with wheat intolerance at work too.

Courgette cake is good too, found in the Atkins recipe book as well.

One more thing I like for breaky is lettuce leaf with smoked salmon, cream chease and scrambled eggs wrap.

Also love cooked breakfast at the weekend, using homemade sausages, bacon, tomato, mushrooms, eggs, etc. It is SO tasty and keeps me going till dinner time!

I also agree with people abve about leftovers and soup in the morning. Leftovers are brill!!!

I was addicted to this for quite some time. Totally Induction safe and tastes good cold as well.
Spray 6 muffin tins with pam. Heat oven 350C.
Take 6 slices of bacon and nuke for 1-2 mins.
Take bacon out of microwave and wrap around inside of muffin tin. Take pork sausage (out of casing) and pat down on bottom of muffin tin. Only a thin layer.(I use 3-4 sausages for 6 muffin tins) Then take 6 eggs and break them individually into muffin tins on top of sausage and inside bacon.
Bake for 30 mins. Very Yummy!! I usually eat 2 and safe the rest for lunch/snack or breaky the next day!!

Default Breakfast idea

This recipe will be 6 "Egg Muffins". They are quiche like in consistency. My husband and I both enjoy them.

5 well beaten eggs
1/4 cup cream
1/8 cup iced water
1 teaspoon parmesean cheese
pepper to taste
Mix together thoroughly.

Mound no more than an 1 heaping tablespoon of grated cheese in each of six sprayed muffin tins. (Tip: Home grated cheese goes further than pre-grated, packaged cheese.)

Add crisp bacon or diced ham, sausage, peppers, left over veggies to muffin tins topping cheese. Pour egg mixture over cheese and "toppings".

Bake at 350 for 15 minutes. Can be refrigerated and warmed up later.

Kinda boring but I uaually have either:
1) deli ham with 2 eggs & 1 piece of cheese as an omlette
or
2) use sausage instead of ham


it's quick & tastes great. I really don't know what else to fix for breakfast?

The entire recipe of eggs, cream, parmesean, grated cheese and water has about 8 total carbs according to FitDay.com. You would have to add carbs for anything you add to the quiche muffins ... mushrooms, peppers, sausage, bacon, ham, etc.

I estimate my ham and mushroom quiche muffins wind up with about 2 carbs per muffin.

Bear in mind this is the only serving of cream I have all week, so you may want to modify the amount of cream.


45ml double cream
90g mushrooms
Tsp butter
50g blue stilton

Fry mushrooms until soft, added the stilton then the cream.

Serve on top of lettuce.
