Default Induction Lunch Brown Bagging & Meals on the Run

Come on guys there are a lot of new folks here let's give them some options. Makes this a long thread & we can all get some ideas from it.

My Brown Bag Lunches this week

Monday: Mixed Salad w/several types of leaf lettuce, celery & some pickled Garlic Cloves thrown in, Olive Oil & Vinegar Dressing, Smoked Trout w/lemon squeezed on it,

Tuesday: Salad same as above but w/some cucumbers added, deviled eggs, turkey pastrami wrapped around some Pork Rinds.

Wednesday; My dailu lunch Salad as above, Cold Asparagus w/Mayonaise Dip, Homemade Chicken Vegetable Soup

Around our house we are always making soup stock from old chicken, pork etc bones then adding some meat (chorizo, pork ribs) & later some veggies for good clear Atkins induction friendly soups. Good at any meal & a big pot last for several meals too.

Here in Singapore we've got B/King & I've got one downstairs from my office, no problem to sometimes pop down & get a whopper w/cheese hold the ketchup & eat it bunless w/a bottle of ice cold water. Does the trick in a pinch.

So far this week for lunch I've had...

Monday: Roast beef, 1 stalk of celery with 1.5 tbsp. cream cheese, and a couple of sundried tomatoes.

Tuesday: Turkey and Gouda roll up w/ mayo, small mediterranean salad (mozerella, basil, tomato, black olive, olive oil, s&p).

Wednesday: sm. salad (lettuce, celery, toms) w/ taco meat and a bit of sour cream.

Lunch today:

Hard Boiled Eggs & Some Beef Jerky & small Salad
More or less a meal on the run.....but it works

I buy the tuna to go with the packet of mayo that you add or chicken wings I made the night before taste good cold

I have a salad every day for lunch with:
a mixture of lettuce leaf, baby spinach, cucumber, red capsicum (pepper),
and then I add one of mushroom, snowpea, tomato, avocado, olives & fetta just to keep it interesting.
I try to bring along a tablespoon of mayo or something to dress it.

Sometimes I will add some sliced deli meat, roast beef, chicken drumstick, tuna packet, smoked salmon rolled up with cream cheese inside, or leftovers from a stir-fry.

I take a 20g (<1oz) cheese piece, or a celery stick with cream cheese, or a boiled egg to have as a snack just in case. I very rarely feel like a snack but don't want to get caught out.

Default Lunches

This weeks lunches:

Sunday- lettuce wrapped roast beef and cheese rolls with a little spicy
mustard
Monday- Leftover parmesean chicken breast sliced thin in mixed salad greens with blue cheese dressing

Tuesday- Taco salad with lettuce, cheese, fresh salsa and ground beef

Wedneday- 4 oz grilled fish with Cajun spices and a salad with blue cheese dressing

Thursday- Hilshire smoked beef sausage and broccoli with Cheese

Friday- Take out Mandarin or Terriaki Chicken without the sauce and steamed veggies

Another easy peasy one.

Often roast a whole chicken in the oven & never finish it.

Pack the leftover meat cold w/small packet of mayonaise as a dip (post thanksgiving style) as a main lunch entree.

What would you take if you didn't have a refrigerator to put the meats and salads in?

Right now my husband it taking canned chicken breast, snacking on cheese and pork rinds.

Any suggestions?

If your husband can bring a small cooler or one of those insulated lunch bags (you'll be able to find them in the "back to school" sales stores are now having), he can put salads, cheese and some meats in that. Also those re-freezable ice packs come in handy.

If he wants something hot to eat, they sell wide-mouth Thermos jars too. Those keep foods hot for 4-6 hours.
