| The key isn't what you pack for lunch, but what you pack it IN. Go to Wal-Mart and get a thermal lunch bag/box and an ice pack. I pack DH's lunch every day (usually leftovers from the night before), use ziploc containers and the thermal bag -- and he can take anything, even if it needs refrigeration. And then tell him -- "No excuses!" He's just looking for an excuse not to do this WOE :nod Joan J

| That is a fabulous idea -- DUH! hehe Why didn't I think of that? I will definitely do that! That opens up a world of options that we didn't have before, thanks! I could still use lunch ideas -- things that will be good to eat for lunch without the ability to heat them. Anyone have lunch favorites they'd like to share?

| Sit down with the Acceptable Foods List printed out and your DH -- go over the list and find out what foods he likes (I've been married 26 years. I thought I knew everything he liked! I didn't! It might surprise you! LOL) Here's my DH's favorites -- if you can't do leftovers: 1 scoop of tuna salad/ 1 scoop of egg salad on a bed of lettuce with pork rinds for dipping. Hard boiled eggs. 6 thin-slices of salami with about 1/2 tsp of cream cheese on each one, rolled up. Deli roast beef, swiss cheese, rolled up around a dill pickle. Chef salad -- lettuce, greens, peppers, onions, hard boiled egg slices, any leftover cooked meat; dressing in a small container on the side. Deli boiled ham, cheddar cheese, lettuce, rolled up. Any baked chicken - it's even better cold, in his book. His new favorite: celery sticks with Carb Options Ranch dressing in a small container for dipping. I also include cheese sticks or some macadamia nuts (he's on the upper rungs of OWL) for snacking. You want him to have snacks available if he needs them so he's not tempted to hit the vending machines! I'm sure others will have lots more ideas! Tell your DH that my DH has gone from a size 46 jeans to a *hot* 36!!! LOL Joan J

| even without the cooler you can get packets of mayo and pop top single servings of meats and let him fix salad for eating with pork rinds or a whole veggie he likes like peppers or tomatos. if his coworkers can stand him thin slices of a small onion used as bread are great with ham salad.

| Here is some ideas: Roll-Ups - 1. deli slices of your favorite meat - roast beef, turkey, chicken. Some fresh sliced cheese. Pack in ziploc baggies, @ lunch roll it up w/ the cheese on the outside. Add some lettuce, mayo, or even mustard if you want. 2. Deli slices spread w/ a bit of cream cheese and take a green onion top, place it on the meat and roll it up...mmmmm Tuna - Either an oil & vinegar mix or a tuna salad. Use it on celery sticks. Veggies & Dip - Fav veggies (use only ones that are on your plan..induction,ect.) and either a cream cheese dip or just your fav salad dressing. Salads - This is something I take to work nearly every day (with a roll-up for snack) There are soooo many good salad recipes out there. Eggs - Either egg salad (use celery sticks) or deviled eggs. Olives, pickles,ect would also make a good snack. There are tons of options out there, just use your imagination. You can combine some of these like I do. Mostly I take some type of salad (that way I know I got all my veggies in for the day) and either celery & cream cheese, and a roll-up for my snacks. Hope this helps |
