Default Atkins Muffin Mix

Tried the Atkins Lemon Poppyseed muffin mix last night and it's good! Especially with a little cream cheese or butter. Yummmm

Hmmm, I might have to pick some of those up at some point.

Saw your other post about those too though, do your best to stay away from those on induction, even if they have the four phase logo they are technically a no-no. Have you ever tried baking with flax seeds? You would be surprised how rich and moist flax-seed baked goods can be, and even still be induction friendly.

I'd had a package of the banana nut mix for a few weeks and finally tried it today. If you like fake-tasting food that's so sweet it will make your teeth try to flee your mouth, you'll love it.

The mix contains banana flakes as well as artificial flavor, but it has that chem-lab banana ester aroma that I find totally unappealing. The sweetness might not be as extreme as I think it is, since eating so little that's sweet on Atkins means everything tastes sweet to me now (hey, who sprinkled sugar on the broccoli???). Using cream cheese on my muffin was helpful, since the tartness cut the sickly-sweet quality.

On the pro side, the texture was good. I used a muffin top pan, as I like a muffin with some crunch, so I can't vouch for how a regular muffin would come out, but I think it would be pretty good.

On the very, very con side, I noticed something incredibly slimy on the part of Atkins Nutritionals when I was inputting the nutritional data in FitDay. They give ND for both the mix and the prepared muffins. But when it comes to total fat per prepared muffin, they only give the gram weight for the mix--leaving out the 2 teaspoons of oil per muffin, plus the fat in the egg. The total fat amount is the ONLY piece of info they omit. My guess is that they do it to try and rope in low-fat dieters who may look at the package to see if the muffins will work for them. I can't think of any other reason, and I think it stinks. Ironically, the lowered fat amount (lower by 9g or so a muffin) is either of no interest to those of us doing Atkins, or is even a detriment. It's just a very irresponsible thing for them to have done.

So getting back to the muffins, I doubt I'll have another of these. I might give the lemon poppyseed ones a try, since I like those flavors better anyhow and think they'll taste less phony. But then again, I'd probably be just as happy with a flax and almond pancake, yum, so why am I bothering with a Frankenfood? ensive
