Default Atkins Bake Mix -- bread recipe

I bought the Atkins Bake Mix and made the bread recipe on the side of the can. After half a month with no bread, I was really grateful for a slice! I think I baked it too long because it was sort of dry and grainy (of course, some nice BUTTER helped!). Next time I'm going to add another packet of splenda since this loaf was too salty for my taste. What does everyone else think?

I got a can of the bake mix from a friend who'd gotten it from her mother. None of us could make it palatible, so now my mother has it.

I searched for low-carb bread recipes tonight and found a few that were pretty low. I'm going to try them out (if I can find the ingredients ) and will report back if any are good.

Default atkins bake mix

I purchased the sourdough bread and I followed the directions exactly-it didn't rise well and when I took it out of the oven and let it cool it was still uncooked inside and on top of that it sunk as it cooled.... I tried to cook it again for 15 minutes and it was still the same I tried a piece and it was all chewy and gross...never spending my money on the stuff again-I do love the deluxe brownies and chocolate chip muffins though!

HI all, I'm a real baker..meaning that before starting on DANDR I always baked my own breads so I can usually work with a recipe and get it to turn out good but I've tried the Atkins Bread recipe and wasn't at all happy with the results. And since it's such an expensive product, I hated that it was such a dissapointment. I've tried several other low carb bread recipes from this and other sites and the best I've found is one submitted my Gabby..called Gabby's World Famous Bread. It's moist, very tasty, and substancial...great for making a sandwich with. Thanks Gabby!!

Everything I've tried with soy is just yuck. I've found two commerically prepared breads that I'll eat, Nature's Own and Carbxtract.

I think I'll just avoid bread from now on. The carbs in even the low carb ones aren't worth the taste.

I make excellent pancakes and muffins using the bake mix but haven't tried to make bread yet.

Do you need a bread machine for this?

Nice to meet ya! If you're asking about Gabby's World Famous Bread that I mentioned, I did use my bread machine to do all the kneading but did my last rising in my bread pan where I baked it. I don't see why you couldn't make the whole thing in a good mixer or by hand the old fashioned way. Misty

Hi there. I've searched and searched as best I know how, but I can't find any recipe called "Gabby's World Famous Bread" anywhere on this forum, or on the web. Misty, where did you find this? Can you share it or point me to it? Thanks!

You asked about the bread recipe that I think is great..I don't really have time to search for that post right now, (leaving for a week's trip in the AM) so I'll try to copy it here for ya, OK? Gabi's World-Famous Bread

Ingredients:
1 pkg dry yeast (Rapid Rise/Highly Active)
1/2 teaspoon sugar *
1 1/8 cup "baby bottle warm" water (90-100°F)
3 Tablespoons olive oil
1 1/2 teaspoons baking powder
1 teaspoon salt
1 Tablespoon Splenda
1 cup Wheat Gluten Flour **
1/4 cup oat flour
3/4 cup soy flour
1/4 cup flax seed meal
1/4 cup coarse unprocessed wheat bran

Pour yeast into bottom of bread machine pan. Add sugar and water. Stir, and let sit. (This is "proofing" your yeast to see if your yeast is alive. If it's not bubbling, it's dead and you can replace it without wasting all of the other ingredients).

In the meantime, mix all other dry ingredients together in a bowl. Add oil to bread machine pan. Add mixed dry ingredients. Set your machine to the basic cycle (3-4 hours) and bake.

Cool on a rack and enjoy.

* The sugar is totally consumed by the yeast and does not contribute to the carb count.
