Ingredients: Soy Protein Isolate, Oat Bran, Vital Wheat Gluten, Baking Soda, Soy Lecithin.
I got some of this stuff on sale for $2.47 at Wal-mart partially because I was still out of the old standby Soy Protein and/or Atkins Baking Mix. It also had a recipe for a chicken tenders batter on the back that looked tasty. Breading is good, but batter is better - especially on Onion Rings!

The recipe for the batter (.5 cup mix, one egg, and .5 cup water) is horribly wrong. Only after 1.5 cups of water was the substance liquid. After 2 cups it was about the same consistency as pancake batter. At that point, it performed well. Not exactly tasty, but it served as a batter coating well. It did not scorch in the 360 degree deep fat fryer either. I would not pay the original $4.75 for it, but at $2 something it was a bit of a bargain for a 10 oz box.

I like that stuff too. MiniCarb is my fav brand for low-carb baking products, in general they tend to leave out most questionable ingredients.

Their directions in general do need work however. I used their low-carb pizza dough mix and the liquid requirements were way off, I had to double it to make it actually work.

Thanks for the heads on the pizza dough - I was actually thinking about buying some. I haven't really had the urge for baked goods of any sort, but low carb breading (or batter) is a staple.

I tried to make pancakes from this baking mix and it turned out horrible. I had to add almost triple the water than what thier website said to. Just thought I would share.

Default Mini-Carb Mixes

If any of you live anywhere near a Canned Foods Grocery Outlet, go and see if you can find the Mini-Carb mixes (Chocolate & Carrot Cakes, Biscuits and Biscuits) for 99 cents. I did, and loaded up while I was there.
You need to experiment with these batters--they're generally too thick and call for too many added fats that make them too oily. The cake batter was too think and didn't rise much (this has been problematic with all of the cake mixes that I've tried). With the biscuit mix there were so many fats called for (butter, cream, whole eggs and oil) that I was able to substitute 100% of the oil called for with a substance called Z-Trim (mixed with water--see www.ztrim.com for details) and ended up with a much better biscuit using far less calories.

I find that many of their recipes do need some work as well.

There is no need to really count calories or fat in Atkins though, you simply eat until no longer hungry, and you will not be in danger of overeating. I prefer to use all butter as opposed to oil in most of my baking though, as I find it gives a better flavor. The biscuits are quite good while still hot if you use all butter in place of oil.

The Apple Cinnamon muffins are also very decent. They have a nice subtle bran muffin taste underneath the apple.
