Default I just ate something weirdly yummy

I really like redcurrant jelly or cranberry sauce which um are obviosuly BAD....then I realised I can have rhubarb!!!!!!!!!!!!!!!!!!

so I measured a cup of raw rhbarb some liquid sweetener and coz Im odd some lemon...zapped it for 10 minutes in the microwave and had it on some chicken I baked last night...it was amazing

anyway Im a happy camper

I force myself to eat rhubarb about once a month. When I was a kid I would sit in the garden and eat the stalks one after the other until I had a stomach ache....now I'm not a sour food person. I've tried it several ways but still don't care for it. I make a pumpkin desert as one of my veggies that has lots of fiber.

I love both rhubarb and pumpkin, as well as spaghetti squash, jicama, and radishes. I'm going to have to stop hanging out here learning to eat veggies. My problem is that I want them all, every day, and I am still allowing only 30 net carbs a day. I sure hope my CCLL turns out to be over 100.

I wish I had noticed rhubarb is legal in the spring because, as I recall, that is when it is best.

It took awhile to find rhubarb around here, since most stores only carry it in the spring when the local crop is in its prime. I did find it in the organic section at Safeway the other day. I wasn't sure about it since it said it is hothouse grown, so only bought a few stalks.

I tried it yesterday for the first time! Oh my, delicious. It has been so long since I had rhubarb and I didn't miss the pastry with which I was familiar. (rhubarb pie or rhubarb dumplings) This morning I had some for breakfast (rhubarb, liquid sucralose and a little cream). Yum!

I only "zap" mine for about 2 1/2 minutes (1 cup/122g), just enough to soften it and allow the sweet to penetrate it.

Thanks again. I am loving this addition to my personal veggie list, although it is more like a fruit dessert for me.
