Default Has anyone tried Atkins Bake mix as a substitute for flour?

Bought it today and it says that you can substitute it for flour in baking. Anyone tried it? How is it?

Thought I'd give it a shot.

It's not bad. Some folks can taste a slight soy flavor, others can't. Also the final texture might be a bit drier and more crumbly...but it's not a bad substitute for baking.

I have both the "old" Bake Mix and the "new" one - which says "Quick Cuisine" on the top of the label.

The old one definitely has a soy flavour, and I was really unhappy with most recipes I tried using it.

This morning, I made pancakes with the new version, and they were actually edible, without that bitter after-taste. I may discard what's left of the original and stick with the new. I had been almost afraid to open it, since I had read elsewhere all the negative comments attached to it by other taste testers.

I'm happy to report that I was pleasently surprised.

I believe the new version has a little levening agent to it, so it may behave similar to "self rising" flour (which I have never tried), so you may have to adjust your recipes. I guess experimentation is the key.

Bake Mix is acceptable during the later stages of OWL.

I actually made fried pork chops using the biscuit mix as flour...I dipped each piece in egg then rolled it in the bake mix and fried it up.
Schnitzel (sp?)

was good, but browned faster then regular flour would.
