I have developed a nice breakfast routine. I eat cottage cheese and raspberries on the days I work and bacon and eggs on the days I don't. It's been fine. But, I woke up this morning to make bacon and pancakes for everyone else in my house and decided that I wasn't in the mood for eggs.
So, I perused the threads here and found this recipe. Cheesecake Pancakes Recipe I halved the recipe, but still used two eggs. It may have been a mistake but the pancakes, with butter on them, still tasted like pancakes. I ate them with fresh raspberries and it was a yummy change.
It was also a lot of work. I tend not to make things like this because I'm the only one eating them and it would be easier to fry an egg. But, for a change of pace, it was nice. Sometimes I find that eating foods that resemble carb laden foods trigger me to eat because my brain doesn't separate between low carb and high carb. It's why I avoid dessert. So far I'm just pleasantly full.
The moral of the story is: if you're getting bored, try something new!
