First, I apologize for the typos in my first post, I am using an iPad and find it difficult to type on and it also seems to have a mind of its own when it comes to spelling.
Thanks for your comments. I did have a piece of the cheese cake. It was good, but it made me feel totally sick about a half hour after. I'm kind of glad I tried it. I now know the after effects and will stay away the next time. I agree, cheese cake is one of the easiest and tastiest things to make low carb, it's just difficult when you are making a traditional family recipie for 20 people who want the real thing. I'm back on track this morning and will continue on my journey. I may be set back a few days. I'll find out on Friday when I weigh in for the week.
I bet they would not even be able to tell it was not the real thing. There is nothing REAL about sugar.
The low carb cheese cakes are wonderful. Start experimenting

It contains sugar? That is not allowed
It is easy to make you own whipped cream. A cheap beater and some real whipping cream (or heavy cream) and off you go.

I guess I never bothered to read the actual ingredients, just the nutritional info. It said less than one gram... I went for it. I have heavy cream on hand all the time and have made "traditional" whipped cream (with all the sugar) a gazillion times over the years, so yeah... making whipping cream (sans the sugar of course) would be super easy!

That whipping cream consists of almost half sugar really if you look at it. It has 1 gram of fat and 1 gram of sugar. Really bad stuff.

Per whipped topping, I have an amazing one on my site that is so easy. I am posting it tomorrow with the strawberry shortcake, but here it is now:
Fresh whipping cream
1 cup heavy whipping cream
4 Tbsp sweetener (or more to taste)
1 tsp vanilla extract
Whip all ingredients together until stiff peaks form, about 3-5 minutes. In fact, I turn the Kitchenaid mixer to high and walk away for those 3-5 minutes.
