    Default What's for Atkins dinner? Any phase welcome to post and share

    Thought I'd start a what's for dinner thread to get some ideas on what others eat. I love getting new ideas and remembering some oldie but goodies.

    Remember to post what phase you are on unless it's already in your signature.

    Tonight is going to be italian meatballs with homemade marinara and melted mozzarella cheese. I'm not sure what my veggies will be yet. Maybe a spaghetti squash? Haven't worked with that one yet and it sounds so good.

    I was pushed for time tonight so had a quick'n'easy meal which would be fine for all phases of Atkins

    Rolled up a couple of slices of ham with edam cheese slices and microwaved for a minute or so to get the cheese all melty and gooey.
    I need to go salad veg shopping so made a "side" from zucchini "zoodles" (my vegetti spiraliser arrived!!) microwaved for a few minutes then topped wit butter. Really yummy

    Not sure how to get most of your net carbs from vegetables on induction? Read our latest "Eat your Vegetables" challenge thread to learn how we did it!

    Sounds yummy, but I never microwave meat, I thought it wasn't safe! So I can microwave slices of ham with cheese? Yum.

    I've just started microwaving bacon because I like it soft and it comes out just right...it was trial and error with the timing for a bit. I think I've cracked it now. It's the already cooked meat that I wasn't sure about. What we call 'cold cuts' like ham and stuff. I thought you weren't supposed to put that in the microwave. It would be like rewarming chicken which can be dangerous?

    Last night I made the Tuna and "Rice" Casserole that I got from Linda's Low Carb website in 2009. The 'Rice', of course, is cauliflower. Tonight will be leftovers.

    I'm on rung 4 but this recipe is Induction friendly.

    I had ribeye steak! Yummy...and okay on Induction.

    Veggies were a bit soggy (broccoli and Brussels sprouts from frozen) but I saved them with lashings of butter.

    I microwave my bacon too Jan on paper towels but to get it nice and crisp. About a minute per slice. And I heat up (not cook) many dishes in the microwave and I'm healthy so I'm not sure what that's about. Everyone's meals sound tasty though.

    Tonight I am having one of my favorites Corned Beef & Cabbage with butter, mustard and red wine vinegar. So good. I am hungry today!!

    That sounds scrummy, I think we'll have cornbeef and cabbage tomorrow then. Tonight it's my usual chicken and bacon salad as we're at bingo.

    Tonight I'm frying pork chops with buttered mixed veggies (cauliflower, broccoli and squash, from frozen).

    I'm saving the Corned Beef and Cabbage until Tuesday (St. Patty's Day)!
