Default My New Favorite Veggie

So today I made my first ever spaghetti squash and it was fantastic! Very easy to make, just microwave. Then I made the cheesesauce that I believe CajunThunder had shared (again, very simple) and sauteed some chicken. Now, don't get me wrong, I am not a good or a creative cook, but this was so easy and the best meal I have had in a long time. It was kind of a cross between chicken alfredo and mac and cheese. If you are craving your pasta, try the spaghetti squash!

I don't think I've ever been this excited about a veggie, that I've actually posted about it. For those of you that say you don't like you veggies, try this one with a cheesesauce (or plain it tasted good too...maybe just a little butter).

warms me wee heart to hear people gush about their veggies!!

The last few spaghetti squashes I've gotten have been a little bland, disappointingly enough....but ah well...keep on trying.

When I first moved in with bf I introduced him to all sorts of new things, and that was one of them. I had one sitting on the counter and he picked it up and read the sticky label on it. He laughed and said "It says 'The Fun Squash!' on the label!"

So we call it the Fun Squash here...lol

I don't believe I've even seen a spaghetti squash. The image in my head probally bares no resemblence..... ensive

lol, I was thinking the same thing, so I looked it up..

I don't know if I don't like it or if I didn't cook it right.

I had a hard time getting the spaghetti part out of the squash and it was very hard. It this how it's supposed to be?

that's spaghetti squash???? WOW looks more like melon to me LOL

I've never tried to make spaghetti squash, but I was wondering Amber, maybe you could use one of those citrus peelers, you know - the ones where you can peel strands of orange or lemon peel for cakes and stuff? I reckon with that you could make the spaghetti strands before you cook them?

You don't need to shred it!

If it's ripe and cooked enough, when you open it the insides have already shredded themselves into spaghetti-like strands. The texture is completely different, but who cares - it still *feels* like eating spaghetti :yes
