this little lady who retired last year that worked where I teach... she subs sometimes now.....

she's sooooo sweet... and reminds me of my aunt... when I first started this job and cried for 2 weeks, she's the one that helped me out so much!

anyway.. haven't seen her since May.... this morning she just gushed about how good I looked, and how skinny I was... (I told her I was only half way there... she said I was going to blow away)...

but it was so SWEET.. she didn't ask me how I was doing it... she was just made my day... (and made me really remember I'm only half way there!

I love when these unexpected things remind and re-motivate me... don't you?

what's your latest 'get skinny' motivation?

I do have really thin legs... and have on capri pants... so I assured her the ton of blubber was still under my loose fitting shirt...

it's seriously gotten my mind off cheesecake for now... and reminding me that that WOE works....

I'd been kinda 'down' because I've been stalled for 3 weeks, since school started back.. coz I'm not doing all the physical stuff I did this summer... changing schedules has been rough... I've almost hit the snack machine for a honey bun more than once....

but I'm doing better... bring legal food to work... etc. etc..

and this morning just reminded me that the cheesecake and honebuns aren't worth it!

I made a low carb cheescake once... it was awesome.. (more like a cobbler than a cheesecake)...

I used the philly cream cheese, splenda, and 2 egg yolks... and a few blueberries....

(put berries on the bottom of a glass dish and poured the mixture on top)... and baked...

problem was... I couldn't even wait for it to completely COOL... I ate the whole thing.. PRONTO.....

I'm not real good at controlling portions.... even on 'legal' fake sweets....

so I just decided not to make it again.. for a long long time
