Default I Need Some Encouragement

I was very succesfull losing weight a couple of years ago by following the Atkins approach. But it got "old," I quit, and now I have gained all the weight (30 lbs) back. I'm miserable. I want to get back to a lower carb way of eating, but I'm having a difficult time getting motivated and trying to figure out how I can do this in a manner that I can live with forever.

As I plan my menu for next week and think about snack foods, I'm coming up empty. I don't feel like there is much that I can eat, particularly if I want to grab a quick snack.

What are some good snack ideas? What can I eat for breakfast besides eggs and meat?

What has helped you keep eating this way in spite of the difficulties and limitations?

I too found it hard to re induct. Actually I have re inducted many many times but never have had the success of my first stab at it. This time though I have not gotten on the scale and have even stopped measuring. I just want to eat Atkins and "feel better" and make the weight loss a great added benefit. I still struggle but am doing my best one day at a time.

Menu planning.......... check out the recipe forum or go to <http://users3.ev1.net/~fontlady/recipes.html> for many recipes and they are listed as induction friendly.

Snack ideas: pepperoni, cheese cubes, cauliflour, flax chips,

Breakfast............ any legal left over from dinner the night before... think outside of the box here. You dont have to do breakfast foods for breakfast. One of my favorites is taco salad.

What helps me is to remember how great I feel when eating right and how lousy I feel when making the wrong choices. And chanting that "Nothing tastes as good as being thin feels" over and over and sometime over again.

Flax cereal. Pumpkin souffle. Zuchini frittata. Turnip fries dipped in ranch dressing. Melted cheese on a flax cracker.

Microwaved flax bread topped with slices of ham or cheese plus a few cherry tomatoes.
Pau's breakfast muffins/quiches
Induction breakfast ... for a change

Do you have a recipe for pumpkin souffle? I didn't see it on the recipe board. Are flax crackers something you can buy somewhere, or is there a recipe for this as well?

Flax Crackers
1 Tablespoon ground flax (linseed)
1 Tablespoon water

Let sit for a while to absorb then put on parchment paper and spread out (I use the back of a spoon) thinly and microwave till crisp.
You could also ovenbake them too.
