Before the low carb food explosion, Dr. Atkins advocated that his dieters eat whole, minimally processed natural foods---because the more a food was processed and altered the less nutrients they contained. In one of his books, he made the very interesting point that fortified foods (like cereals) are only fortified with specific nutrients, not with all the nutrients they lost during the processing. So,the whole, minimally processed food is far more nutritious than it's processed and altered counterpart. So, if you eat like Dr. Atkins wanted us to eat, you will get those nutrients and they can only help your health (that goes for everyone!)
