| I have recently started eating ham and philadelphia cheese roll ups for breakfast. The make a lovely refreshing change from, omlettes, or boiled eggs or fried eggs etc etc. I also find it quite light aswell. Full fat cream cheese spread on slices of ham and then rolled up and eaten. Rich

| Oh, or sometimes I"ll make this, which is really light-tasting. It has eggs in it, but you really just taste the pumpkin. (I got the recipe off a thread on this site somewhere ages ago.) Wintertime pumpkin breakfast casserole: 2 eggs, slightly beaten 1/4 cup pumpkin (canned) 3 tablespoons heavy cream dash splenda or flavored syrup (caramel is good) 1 tablespoon pumpkin pie spice. Mix ingredients and pour into a cereal bowl (can also be mixed in the cereal bowl if you are like me and hate wasting dishes) Place bowl in microwave for 3 minutes. Serve hot. May add cream if you like.

| Anything goes...remember, it doesn't have to be breakfast food. I am having quite a bit of success eating several smaller meals a day, as I am not too keen on a huge breakfast, either. Rich's idea is one that I am stealing...I eat chicken breast for breakfast alot (I just bake a batch at the beginning of the week. I also keep that microwavable, pre-cooked bacon on hand if I need to run out the door. Good luck! |

| Sounds like you're getting some excellent advice from the crew... I'm just popping my 2 cents in to second the notion that once you stop looking at meals in terms of "breakfast, lunch & dinner", you will be much more open to a varied menu ANYTIME!!! It took me awhile to adapt to this idea, (and hubby has given me more than one grimmace around the breakfast table) but I find the freedom to have meatballs in the morning to be a special privelege! Best of luck to you - check out the recipes forum for more ideas; there are plenty of ideas and links that will have you chowing down in style. S.

| I love eggs for breakfast but sometimes I don't even have 2 mintues in the morning to make them. So I usually eat not breakfast foods in the morning. This morning I had leftover hamburger and cabbage cooked in taco seasoning from last nights dinner. Yesterday I think I had a hard boiled egg and an ounce of cheddar cheese. Monday I think I had leftover meatloaf I made for dinner Sunday night. So anything goes it doesn't have to be just eggs everyday. The meat roll ups with cream cheese are a reallly great snack anytime. I do that alot on the weekends when I'm running around the house doing chores and don't really have time to stop and make something. I make them with turkey and ham both. You can even add green chilies to the cream cheese or garlic or chives for a little added flavor.

| Eggs got boring for me ealy on, too. But now, the concept of eating revolves more about the number of meals eaten, how long since the last meal, and what's in the kitchen than the age-old standard breakfast, lunch dinner menu options as you'd be offered at a B&B. If there's ten-fifteen minutes in the am, I can whip up my dinner in a skillet, eat 2 or 3 bites, grab my lunch if it isn't already in the office, and head out the door. If there's not enough time, I grab a few bites of whatever fat &/or meat is within easy reach, & lunch to go if needed. That can be jerky, leftovers, cheese, HB egg, even some meat out of a can. On weekends, I try to do up a big batch of sausage & bacon, thet get worked away during the week as well as that morning with my son, and prepare other menu items as well to pack & freeze, stock up at the office, or re-stock the fridge at home with RTE's for both of us.
