| I can't find it here either (Colorado, USA). I posted a board asking a few months ago and was told that I'd just have to buy it fresh in the produce section. |

| Oh man.........I'm in Thailand right now and you can buy fresh coconut on the street... The water has 4-5G of carbs and the 'meat' is mostly fat. Both of which aren't allowed on induction. |

| Oh yeah... and when you buy them on the street here they're only .25 US... ha. That and the BBQ carts are great. I can eat a FULL BBQ and chicken dinner (with cucumber) for $1.25 ... w00t. |

| You can find unsweetened shredded coconut at Whole Foods, and other natural food stores. |

| Yea, Whole Foods sells it in the bulk section where you scoop out however much you want.
