| Yellow squash is good too! Also try cabbage with it. You'll need to blanche it or saute it alittle first. But what's super-duper yummy is chopped fresh herbs. I l.o.v.e fresh basil and garlic in scrambled eggs. Saute the garlic, and cook with the egg. When the eggs are setting, add the basil. And right before you eat them, top with some parmesan cheese!!!!!!!

| I've been baking quiche lately. Lots of veggies and mushrooms in the pan, then eggs with a little heavy cream with lots of herbs wisked in. No one misses the crust. |

| Do you ever make frittatta's (sp??)? Usually I sautee some onions in butter and then add whatever's leftover that looks interesting. On the weekend I added marinated wax bean salad and the lone steak that was leftover. Then I mixed up some eggs and cream and mixed things up in the pan with the eggs. When they were almost set I grated some cheese on top and then broiled until it was puffy and golden. This is our creative use of leftovers and with all the combos I've tried, we haven't had a bad one yet. The moral of the story? I don't think there's anything that doesn't go with eggs. Mmmmmm.

| My hubby is the Fritatta master. That man can't cook anything else right. He makes them with zucchini, onion, sausage and pepperjack cheese. soo tasty. |

| This is a really interesting recipe for an omelette using olives, fennel and dill: 2 tablespoons olive oil, divided 2 cups thinly sliced fresh fennel bulb, fronds chopped and reserved 8 cherry tomatoes 1/4 cup chopped pitted green brine-cured olives 5 large eggs, beaten to blend with 1/4 teaspoon salt and 1/4 teaspoon ground black pepper 1/2 4-ounce package crumbled goat cheese Provençal (with thyme, basil, and sweet red pepper) 1 1/2 tablespoons chopped fresh dill Heat 1 tablespoon oil in 10-inch nonstick skillet over medium-high heat. Add fennel bulb; sauté until beginning to brown, about 5 minutes. Cover and cook until softened, stirring occasionally, about 4 minutes. Add tomatoes and mash with fork; mix in olives. Season with salt and pepper. Transfer mixture to medium bowl. Add remaining 1 tablespoon oil to same skillet; heat over medium-high heat. Add beaten eggs and cook until eggs are just set in center, tilting skillet and lifting edges of omelet with spatula to let uncooked portion flow underneath, about 3 minutes. Sprinkle half of cheese over half of omelet, then top with fennel mixture. Sprinkle dill over, then remaining cheese. Using spatula, fold uncovered half of omelet over cheese; slide onto plate. | This is what I made this morning with leftovers. I cooked some spinach, and onions. I cut up a leftover chicken breast that had some hot sauce cooked into it. Mixed it all together. I then put it in an omlette with cheese. I also added some salsa and sour cream on top. It is really yummy. BTW, I can't think of a vegetable that I haven't tried with eggs. My favorite lately has been cabbage, bacon, and eggs.
