Default You know I love this diet and greasy food...

Any diet or Way of Eating that allows me to eat fried chicken has me to my core. I know there are others that eat strictly lean meats and don't relish fried foods as much as I, but if my blood work stays as good as it has, I don't see any reason to change. Bring on the roast, ribeyes, and healthy saturated fats! Greasy might not be a food group, but this diet proves you don't need to avoid it like the plague either. Viva la fat!

Definitely butter.... Being able to cook with butter is such a joy after seeing so many failed cooking experiments due to margarine. Cooking with something real rather than a plastic wannabe tastes so much better.

I made a fried chicken dish using pork rinds, italian seasoning, my family is not on a low carb lifestyle, but my teenage son, and my wife, ate almost all of it!! It was kind of like that oven coat stuff....

I love cooking with butter too.....

Butter...mmmmmm haha! Butter good, margarine baaaaad.....

Isn't is it so awesome to laugh about what we eat now!!! Everybody at work gives me a hard time when we do the birthday parties, you know, cake, nachos, blah blah blah.....I just smile!!!

Oh I forgot my new favorite recipe too - Grilled Buffalo Wings. For so long, I was told that chicken wings were so unhealthy for you due to the amount of skin and fat. They are now at least once a week staple. These are best on the grill outside, but a George Foreman grill will work in a pinch or when your propane runs out like mine did last week. :-(

Grilled Buffalo Chicken Wings

Quote:
Ingredients
3 pounds chicken wings, separated at joints, tips discarded
1 cup Louisiana-style hot sauce (Frank’s Hot Sauce recommended)
1 (12 oz) can Diet Coke with Splenda (never anything with aspartame - not heat stable)
1 tsp cayenne pepper, or to taste
1 tsp ground black pepper, or to taste
1/2 tsp Thyme
1/2 tsp Garlic Powder
1 tablespoon soy sauce
1 TBS Dried Chopped Onions
Instructions
  • Preheat a grill to medium heat.
  • In a large pot, mix together the hot sauce, cola, cayenne pepper, black pepper and soy sauce. Add the wings to the sauce - frozen is okay. Place the pot to one side of the grill, so the sauce comes to a simmer.
  • Use tongs to fish wings out of the sauce, and place them on the grill for 8 to 10 minutes. Then return to the sauce to simmer. Repeat this process for about 40 minutes (4 cycles). The sauce will thicken at the end. When the chicken is tender and pulls easily off of the bone, you have two options. You can dip one last time and serve for sloppy style wings, or serve right off the grill for dryer wings.
These are nearly zero carb as well, and very full of flavor. You will not be disappointed if you try these.
