I always "eye" the recipe and don't measure but I use cooked ground beef, a splash of tomato sauce, a bit of cream cheese or cottage cheese (not in induction of course), garlic, basil, oregano, thyme, a few shakes of grated parm, onion sauted in with the beef, sometimes a handfull of thawed and squeezed frozen spinach, sometimes a few pieces of canned mushroom (whatever is left in the fridge). I pack the mixture while hot into the pepper, top with a little more shakey parm cheese and bake, uncovered, at 350 until the pepper is soft.
DH doesn't dig on green peppers really, so I usually just make a single serving.

This reminds me of Chile Rellenos...

"The chile relleno, literally "stuffed chile", is a dish of Mexican cuisine, consisting of a roasted green New Mexico or poblano chile pepper stuffed with cheese (or more rarely minced meat), covered in an egg batter, and fried. It is usually served covered with a sauce, although the type of sauce varies widely. It is sometimes also served in a taco with rice, salsa and other toppings."

Step by step with pix

Mine are usually just stuffed with cheese...

That looks awesome!! And that batter... "For a simple batter, whip 5-7 egg whites until stiff. Slowly fold in yolks and a pinch of salt. Or use your favorite batter recipe." Sounds like you are dipping into revolution roll batter. I am making that tomorrow for sure!! *drool*

WOW

Linda's Low Carb Spinach Lasagna is way good. Relatively easy to make, very tasty and great staying power. I had it at noon yesterday. Things happened so that I did not get to eat again until nearly 10 pm. Not even hungry.
