Mashed Potato

I remember when I did this diet before a recipe of how to make mashed potato but so that it was Atkins friendly using cauliflower. Does anyone know this recipe? I did do a brief search on this site but couldn't find it.

Just make it with cauliflower as you would potato.

FAUXTATOES DELUXE

1 large head cauliflower
1/3 cup cream
4 ounces cream cheese
1 T butter
salt and pepper

1. Simmer the cauliflower in water with the cream added to it. When cauiflower is very soft drain thoroughly.

2. Put the still warm cauliflower in a food procesor with the cream cheese, butter and salt and pepper to taste and process til smooth. (I have a blender that I use for this, and I have to do it in more than one batch).

Yield: 6 generous servings, each with 6 grams of carbs and 2 grams of fiber, 4 grams of protein.

I make one similar to Barb's except I throw a chicken bullion cube in it too. I think it helps add a little flavor and round it out.
