| Below is MotherofGizmo's recipe. You can probably adapt it to be more of a cookie flavour by using some cinnamon & splenda, etc. Parmesean Flax Crackers 2 tbsp flax meal 1 tbsp parmesean cheese 1 teaspoon your favorite spice 1 tbsp water Mix all ingredients to form a paste (you may need a little more water). I let it sit for a couple of minutes and then spread out thinly on parchment paper, Microwave for about 2 minutes, depending on your microwave. These are great for using like regular crackers, I like to spread them with homemade pimento cheese, or peanut butter or top with any type of low carb items you prefer!

| Plain flax crackers are easy too - mix 1 tablespoon of ground flax with one tablespoon of water and let sit to 'bulk up' Then spread spoonfuls on parchment paper and smooth out with the back of the spoon and microwave (a minute at a time) till brown - watch for burning!

| I haven't done it in a long while, but I used to make "ice box" cookies with flax. I just put a few tablespoons of flax meal in a bowl, and mixed a couple of packs of Splenda with a bit of heavy cream and either some vanilla or almond extract. I'd make four cookies by dropping the mixture on parchment paper and microwaving. While they were cooling in the freezer, I'd microwave -- for just a very few seconds -- an ounce of cream cheese, and then make it smooth with a few drops of cream, add a packet of Splenda and extract and then ice the cooled cookies. They were delicious!
