Default "Hardened arteries" - suitable response please

A ggod friend that I don't want to offend is worried sick about my getting hardened arteries that, she insists, always result from eating too much fat.

I did say my cholesterol and triglycerides were improved, but she (and I) don't think/know if this is anything to do with hard arteries.

Anyway can someone write me a script that I can read out to her on the phone later?

"Hardening of the arteries" is a medical condition known as arteriosclerosis.

These links recommend a low-fat diet as a way to guard against arteriosclerosis, but we've learned a lot from the Harvard Nurse's study about the relationship between lowered starch and sugar intake and lowered cardiovascular risk from those types of dietary changes as well.

And yes, they do believe the cholesterol that is circulating in your blood deposits itself on arterial walls -- however, just because we eat the cholesterol doesn't mean it deposits itself. The overall composition of your diet (and not just one piece of food or meal), your activity level, and heredity can play a large part as well.

I'd get her a copy of Dr. Atkins New Diet Revolution and remind her that it was written by a CARDIOLOGIST who lived his own "diet" for over 30 years, played tennis and walked 2 miles each way to work until he was 72 years old.

Thanks everyone.
I'm afraid it's not really possible to thrust a big fat copy of DANDR into the hands of everyone who expresses a concern about my diet. LOL

So, should my response be along the lines of "you can tell if someone has hardened arteries by their cholesterol levels. Mine have improved since I've been on Atkins, so there is nothing to worry about."

Is that both simple and accurate?

The person concerned is stick thin and has a rabid phobia of ever eating anything with any fat in it.

She doesn't dispute that Atkins causes dramatic weight loss, but thinks it comes at a price: hardened arteries. I wanted a rehearsed line that I can say to her and anyone else who brings up the same argument.

How about saying you've spoken with your doctor (do, if you have a concern, you'll feel better after) and that the doctor says there is nothing to worry about. That he/she approves of the way you are eating and then thank them for their concern
