| If you are on the other fruits rung you can use any baked apple recipe substituing sweetener for sugar . Here is one. http://allrecipes.com/recipe/baked-apples/detail.aspx other than that, i'm not sure what you could use for a 'baked' apple if you aren't on the other fruits rung or higher. Lindas site has a good fried apples recipe that uses chayote squash. http://www.genaw.com/lowcarb/fried_apples.html I'm not sure what run chayote falls on though. but those are fried and not baked. I gues syou could use jicama but I don't think it goes very soft.
