Default CheeseCake? How?

I keep reading about people who are making cheese cake and saying it's Atkins friendly. Please help me out on this. I'm on my 18th day of Atkins and my understanding is that I can't have ANY sugars at all. All the cream cheeses and sour creams that I've seen all contain sugar. And Vanilla??? How much sugar can I have, IF any a day. I'm confused. I've been strict as far as getting nothing more than 20 grams of carbs and 0 sugars and am having great success. I don't understand how anyone can do this, especially since aspartame stops my weight loss. Please let me know. Thank You.

Here's a recipe that's induction legal (I'm not sure if you're still on induction or not) from Linda's low carb website, Darth. As long as all the ingredients are Atkins friendly, you'll be fine.

Check out all her recipes if you haven't already. The ones with a * by them are fine for induction.

NO-BAKE CHEESECAKE
1 envelope unflavored gelatin
1/4 cup cold water
1/4 cup cold water
16 ounces cream cheese, softened
1/2 cup granulated Splenda or equivalent liquid Splenda
1/8 teaspoon vanilla
1 tablespoon lemon rind, you'll need 2 small lemons
1 cup heavy cream, whipped

Sprinkle the gelatin over 1/4 cup cold water. Let stand 2 minutes. Microwave on HIGH 40 seconds; stir and let stand 2 minutes until dissolved. Stir in 1/4 cup water. Beat the cream cheese, Splenda, vanilla and lemon rind until smooth. Gradually beat in the gelatin. Chill until slightly thickened, about 20 minutes. Fold in the whipped cream. Pour into a large pie plate; chill until firm.

Makes 8 servings

With granular Splenda:
Per serving: 310 Calories; 31g Fat; 6g Protein; 4g Carbohydrate; trace Dietary Fiber 4g Net Carbs With liquid Splenda:
Per Serving: 304 Calories; 31g Fat; 6g Protein; 2g Carbohydrate; trace Dietary Fiber; 2g Net Carbs

I guess my question is, how much sugar can I have. I say this because a lot of the recipes that are considered induction friendly have at least 1 gram of sugar in them. Worcestshire Sauce, whipping cream, cream cheese, Hidden valley ranch, just to name a few. doesn't make sense to me 'cause I thought induction meant, "NO SUGARS!"

Cheesecake...ahhhh...food of the gods. LOL

Cream has natural sugars. Not added sugar. Or, if you've got a brand that ADDS actual sugar to the cream...Find another brand!! You can have naturally occurring sugars in products like cream, sour cream, etc. Cream cheese--look for a brand that does not have any added sugar. Store brands I've found, typically don't have added sugar like the major brands do.

Umm, as for sweetner, use splenda not aspartame. You can get a liquid sucralose at www.sweetzfree.com that has less carbs (0) than the powdered version splenda that you buy at the grocery store.
