| though it's higher in carbs than most induction veggies, it is on the list..so it's not a 'starchy' veggie as far as atkins goes. it is a type of squash though..and can be eaten savoury as well as sweet. you can probably find alot of receips on the internet...

| I don't have a recipe but I mixed mine with heavy cream, butter, and Splenda. Tasted good to me - reminded me of sweet potatoes.

| Pumpkin is permitted on Induction and yields 18 total carbs and 7 fibers per cup. As is the case with tomatoes and squash, pumpkin is botanically classified as a fruit.

| Oooh...thanks for bringing the subject up! Now that the fresh veggies are turning to the seasonal squash, winter cabbage, onions, etc., pumpkin is a great supplement to veggies and provides lots of great vitamins to boot! Now I have to go buy more pumpkin... |
