Hey everyone, Long time no talk to........busy with school/work/etc. Just to let you kind people know.........My daughter has lost 28lbs, since July, 6 inches
in her waist, unbelievably fit and happyhappyhappy. I'm very proud of her and she's sticking with it and looks like she's going to stay with the food change for good. As for cooking, it's messed me up completely...hahahahahahaha I found lowcarb baking mix at a DollarStore and am buying it up all over Houston!!!! It's now become my bane in life to find it......hahahaha The rest of us have lost weight too without trying.

My question today. My daughter's turning 20-any ideas for a birthday cake??
Have found low carb icing, but need the good part!!!!!!

What phase is she on? I know for my birthday I was only on introduction so we had the cheescake reciepe on the boards here. Someone suggested a meatloaf cake with lowcarb ketchup icing that I wanted to try, but the gang wanted the sweeter version. I am not sure about the baking mixes as I have not moved up high enough on the ladder to have it yet. Best of luck and Happy Birthday to your daughter.

She's just been adding carbs in slowly. (She started at absolutely ZERO) I found a picture and recipe for a meat cake that just made me laugh. We had talked about a meat cake, just jokingly. It's at www.blackwidowbakery.com

Great news about your daughter's losses! She's doing very well indeed.

If she's already added in nuts, then you could try something with almond flour. Or, if still eating induction foods, then, as Fatty suggested, a cheesecake would be good.

It would be great if your daughter started adding in foods according to the Ongoing Weight Loss (OWL) rungs. That way, she can find out what foods she is sensitive to, if any... also, what her critical carb level for losing is (CCLL).

On the subject of meatcake, did you know that the original "mincemeat" to make Christmas mince pies (do you have those in the US? They're sweet), was really made with ground beef!! The rest of the ingredients are pretty unfriendly for Atkins though, in the early stages (currents, sultanas, alcohol etc.)

Hope she has a wonderful 20th birthday!

This is the 'cake' I'm planning to make for Christmas - you could decorate it with piped cream instead of icing and it would make a very delicious birthday cake. There are lots of other more 'cakey' recipes at that site also.

I am passionate about the Cheesecake Factory's 6 carb cheesecake, but for special occasions only. 25th might count as a special occasion, and omigod is that cheesecake good.

This is an awesome recipe, if she's up to the nuts rung. It tastes a lot like carrot cake with cream cheese frosting. I feed it to non-low carbers and they never know the difference. The frosting is really creamy and smooth.

Pumpkin Bars with Maple Cream cheese Frosting




Mix:
1 cup almond flour
1 teaspoon cinnamon
½ teaspoon ground cloves
¼ teaspoon salt
½ teaspoon baking powder
½ teaspoon baking soda
24 packets Splenda (16 tablespoons) (or ½ cup DaVinci SF syrup and 6 packets Splenda)
3 tablespoons chopped walnuts

Then mix:
1 cup mashed pumpkin (I use Libby's canned)
2 eggs
½ cup oil

Mix dry into wet and pour into sprayed 9x13 inch pan. Bake 350 for 30-40 min. Let cool then frost. Really good next day!!! If they last that long!!!

Cream Cheese Walnut Frosting
4 oz softened cream cheese
2 tablespoons softened butter
2 tablespoons heavy cream
1 teaspoon maple or walnut extract
1 teaspoon vanilla extract (or 2 teaspoons vanilla)
6 packets Splenda OR SF vanilla syrup to desired taste and consistency.

Mix all together till smooth then add 3 tablespoons chopped walnuts and spread on bars!

18 bars at roughly 3.5 carbs each and 2.5 if you use the DaVinci and Splenda.

I'm a fan of the old "sponge" cake. You know the kind.....

1 sponge
1 can of spakeling
1 spakeling knife

Use knife to spread spakeling all over sponge. Add 1 candle on top and light...carefully. Stand back and blow out the candle.

Viola! One LC birthday cake for sure!

Happy birthday to your daughter! Congrats for her awesome weight loss!

Thanks for all the yummy ideas for my daughters birthday. I may try all of them...hahaha
no I won't just kidding............I do like the "sponge" cake idea and may do that one, but a BIG one. Fortunately she's not down about not having a real cake. She even said everyone else could have one......but she's liking her new shape and feeling good.

I love everyone's pictures on their sites...................I wish we had taken before and after pics.
