| Raw veggies are a favorite of mine! I love them for snacks, especially bell peppers. Cucumber slices with garlic salt are a favorite too. What about a great side salad? If it seems insubstantial, top it with crumbled bacon, hardboiled egg, and cheese. For cooked sides...peppers are the way to go! Saute bell peppers with a bit of oil, garlic and onion. | Jicama is great! It's crunchy like an apple. slice it and eat it with a little lemon juice and sweetener. You can also chop it up, mix it with some cinnamon and sweetener or DaVinci syrup and nuke it for about 6 min at 30% power. It's like cinnamon apples. You can find it with the hard veggies like turnips, winter squash, rutabega, etc.

| "salad" veggies that can be cooked: Bell peppers (as Juli mentioned) mushrooms (sautee smaller ones or grill big ones like portabellos) bok choy (saute it like cabbage or use in stir frys) escarole (saute it like cabbage---has a slightly bitter taste) fennel (braise it in butter and heavy cream, roast it in the oven, saute it like cabbage) radishes (saute them in butter)

| mmm asparagus... I love sauteed just about anything - mushrooms especially. Salads are another fav of mine - I like spinach, mushrooms, hard boiled egg, cheese, and some pepperoni in mine. My roommate made an atkins friendly ranch dressing that I'm just so happy about |

| Lately I've been having a love affair with zuccini. I grate it and saute it with butter and garlic and sprinkle parmisan cheese on top when it's done. OMGosh!!!!! It's awesome! Even my kids like it, which is a bummer because there is less for me! lol! liz |

| I really love bok choy (leaves and stalk) sauteed with a little sesame oil and some lime juice. It's a salad veggie.
