Default Manufacturing cream?

Is anyone familiar with manufacturing cream? My husband got me some from a restaurant supply. It has a much higher percent of milk fat than any cream you can buy in the grocery store. I can taste the difference too. I have been drinking heavy cream to up my fat and this is much more dense.

Main ingredient is cream. It didn't break everything down since it was commercial and not labled for sale to the public but it didn't contain any hidden sugars. It says one tablespoon is 50 calories with 50 calories from fat.

It had some stabilizers in it - "Simply put, mono- and diglycerides are fats. They are made from oil,usually soybean, cottonseed, sunflower, or palm oil, act as emulsifiers (provide a consistent texture and prevent separation), and are used in most baked products to keep them from getting stale. In ice cream and other processed foods, including margarine, instant potatoes, and chewing gum, they serve as stabilizers, which give foods body and improve consistency"

What do you guys think? I am pleased to have it because I need to up my fats and it seems like a good idea to me. I see nothing in the ingredients I can't have and I never go over what Dr. Atkin's says we can have for cream allowance (3 oz a day). I am just at a very paranoid stage right now and I am wary of everything. Any thoughts would be appreciated.

Ah good, I got this off the wiki site you gave me, Jen.

In the United States, cream is usually sold as:
  • Half and half (10.5–18% fat)
  • Light, coffee, or table cream (18–30% fat)
  • Medium cream (25% fat)
  • Whipping or light whipping cream (30–36% fat)
  • Pegs of cream (15-20%)
  • Heavy whipping cream (36% or more)
  • Extra-heavy or manufacturer's cream (38–40% or more), generally not available at retail except at some warehouse stores.
Yay! That makes me feel better. I am so paranoid these days. He got it either at Smart and Final, Costco or Sam's not sure which one. Wow, I am happy now.

Oh wow wouldnt mind getting my hands on some of that. I thought I was the only one that drank cream lol. I take a little sip now and again when I pass the fridge. I dont even come close though to the limit but I love the super buttery creamy taste. It feels like Im indulging in some secret sin and must hid in the darkness of my pantry as I sip it, lol!

It's awesome so I wish I could find some like you found. How did you come about it?

My husband recently managed an Italian restaurant (they just sold it) but restaurants use it to make their creams, sauces, soups, etc. Are there any Smart and Final's in the Chicago area? Look for stores that are restaurant supply. You will be able to find some.

Okay, Smart and Final is only in the western states. Do you have a Costco in your area? or a Sam's? They should carry it.
