| Here in Southern New Mexico I usually go for the Steak Tampiquena (grilled steak covered with green chiles, onions and cheese on request), Taco salad with chicken or shredded beef (no beans) sour cream and salsa for a dressing (ask for this in a regular bowl, not the fried flour tortilla bowl that is often used!). My very favorite is the Chile con Queso steak (hambuger steak) (Only if you know the queso is made from real cheese and not a cheese and flour rue!). I order the chile con queso on the side so I can control the amount of cheese I consume. Another hint; just make sure the tortilla chips and salsa are on the far side of the table! |

| I know this isn't a mexican restaurant thing, but let me know if you mind me sharing, cause I just tried it last night and OH MY GOODNESS > Take some shredded cheese, and on low heat melt and fry it up in a pan like nacho chips, and then load it up with ground beef or chicken or carne asada, sour cream, salsa, green onions, tomatoes and all other yummy nacho things lol. Debie just recently told me about this, but also, if you make a "bigger" cheese chip, drape it over the bottom of a margarita glass and let it cool, you have an induction-friendly taco salad bowl |
