Default Broccoli Ideas?

Other than broccoli with cheese, does anyone have any creative ideas for broccoli recipes? I've seen some pretty creative recipes on these boards using cauliflower.

You can make legal cream of broccoli soup. Cream soups are just made with broths, like chicken broths with onions, you cook the vegetable in that, then puree' it and add cream. 'Regular' recipes would add flour or cornstarch, but if you pour off some of the broth and blend the vegetables and then add the cream, you will not need the thickener. Once I made it and it was too thin, so I just added some shredded cheese and it was awesome!

I made a broccoli cheese soup the other day by cooking broccoli in home-made chicken broth, with some onions and shallots, then added cheddar, parmesan, a splash of heavy cream, and some pepper to taste. It was wonderful.

Thumbs up Re: Broccoli Ideas?

I like to make a Brocolli, Chicken Breast, Cheesy Casserole.
I cut the chicken breast in chunks and saute in olive oil, cooked well.
As i'm doing that, i'm steaming brocolli flowerets til just tender.
I make a cheese sauce with cup of heavy cream, 4 ounces cream cheese and 2- 3 ounces cheddar sharp cheese. Creaming together over med-low heat in saucepan. stirring often.
Place cooked chicken in bottom of 8x10 baking dish toss in brocolli and pour cheese sauce over mixture. No need to stir. Sometimes I sprinkle an ounce or so of shredded Jack Cheese on top before baking. This is also good with sprinkle bacon bits on top.
Bake at 350 degrees for about 20 minutes. Uncovered

Put it in an omelet.
It's also pretty good to eat raw with blue cheese dressing.

These all sound SO good!!! I have a question...SOMEWHAT related...it's about broccoli. I eat ALOT of this and just started religiously using Fitday. Well, the sheets that I printed out at the beginning of induction that show the carb counts for the the induction veggies show that 1/2 cup of cooked broccoli is 1.6 net carbs meaning 1 cup would be 3.2. But on Fitday it's 6.1 net carbs (yes I'm subtracting the fiber) when you input "broccoli cooked, from fresh". What gives? That's a pretty large difference. There are several of the veggies that are different and I am not positive what to go by...but I know what I WANT to go by!! LOL

As a side, I like broccoli with garlic. Cook the broccoli. Then saute some minced garlic in olive oil and put it over the broccoli. Sprinkle with some red pepper flakes and grated parmesan cheese.

Fitday has many options, and in some they automatically assume certain ingredients are added. Try broccoli, boiled, drained.
