| If you are using veggies as your snacks, be sure to count those snack veggies as a part of the 3 cups of vegetables we eat daily according to the book. Also be sure to eat those veggies with some kind of fat or protein in order to delay the insulin response. As for non-veggie snacks---cheese sticks or cubes and hard boiled eggs are high in fat, which make them the ideal snack food for Atkins.

| NUTS! I buy almonds with sea salt. LOADED with vitamins and fiber. No need to cook them, thaw them out, etc. I keep a jar at work on my desk and one at home to hit as soon as I walk in the door if I'm starving. (That's when I used to hit the chips. |
