    Default Amazing Dessert

    well, since my surgery two weeks ago, I have been down in the dumps and feeling really overly emotional. So, today even though I am supposed to be just lying around, I decided to make some comfort food. So I made this amazing low carb pumpkin pound cake from that guy, George Stella's cookbook. It was just what I needed--something sweet, dense and flavorful to end my dinner. I topped it off with splenda sweetened whipped cream yummy.If anyone needs or wants the recipe--let me know. I think it was better than my pain medication as I am feeling better already.

    Okay here you go

    Pumpkin Pound Cake
    Preheat oven to 300

    2 1/2 cups Almond Flour
    1 1/2 cups sugar substitute (splenda)
    1 1/2 t baking powder
    1 1/2 t pumpkin pie spice
    1/4 t salt
    7 large eggs
    1 1/2 cups canned pure pumpkin (not pie filling)
    1 1/2 t vanilla extract

    spray the loaf pan with pam or whatever

    in a bowl whisk together all dry ingredients
    in another bowl mix the wet ingredients

    combine the two and pour into the loaf pan

    Bake for 1 1/2 hours or until toothpick in the center comes out clean. Cool and slice.
    I love to top it with the splenda sweetened whipped cream while it is still warm and it gets all melty and runs down the sides of the slice. Mmm-good!

    is this good during induction? because it sounds darn good! and I need something sweet lol this syrup is not doing it.

    not induction friendly....it contains almonds(flour)

    mmmmm im gonna save this recipe for when im in my nut rung .. it sounds sooo yummy ... What temp. should i cook it at? 350?

    Ugh, I need to get out of induction snappy like. It doesn't even have butter which leads me to believe it's not like, 50 bazillion calories... aka, I might eat the whole thing with some lovely whipped cream.

    Wonder if I can substitute the almond with soy (I already have the soy).
