| yes, or sprinkle on the cheese or pour on the cheese sauce. I like veggies. But not everyone does. There are lots of things you can do. Tomato slices can be topped with cheese and broiled. Cauliflower routinely gets mashed with butter around here. Put decadent toppings like olives and bacon bits on your salad, just keep experimenting with dressing them up. I am off to make broccoli soup!

| Hi, Madam I understand your dilemma, as I wouldn't touch a veggie with a 10 foot pole prior to 2nd my go-around on Atkins. On my first round of Atkins, I never made myself try new veggies. And while I was able to lose some weight, I never did make goal or even manage to keep off the weight that I did lose. On my second round, I vowed to follow the book to the letter, and that included breaking out of my box when it came to veggies. And this is what I learned - IT MADE ALL OF THE DIFFERENCE IN THE WORLD. Consider this - if you do what you always did, you get what you always got. It's time to get serious, and open your mind. Try some new things! | As an aside... I am finding butter and garlic - and lots of it, please - are helping me with some of my less favorite veggies. Those will hide a lot of less desirable flavors! |

| Another thing is that many of us have never eaten properly cooked vegetables. Overcooking vegetables makes them very soft, but it also releases the enzymes that make them bitter or makes them have bad, strong odor. My best advice is to go to your public library and borrow vegetable cookbooks that will show you the proper technique for cooking "perfect veggies". Among the better cook books are the ones by Julia Child, Jaques Pepin, Mollie Katzen, and Barbara Kafka. If you are in the UK, I recommend the ones by Delia Smith and Marguerite Patten because they focus on cooking technique (at least the books my library is fortunate to have.)

| Those new bags by Glad and Ziploc, that you steam your vegetables in in the microwave, make awesome steamed veggies. No having your nutrients poured out in the boiling water, and never overcooked. I highly recommend them. Some produce sections have broccoli and cauliflower already in the microwavable bags. I love those!
