Default Christmas Baking you can do on Atkins. Is there any?

I love baking at Christmas time. I'm missing it this year. Is there something out there that can I can substitute for it? Does anyone know of any recipes or anything that I could make instead? DId anyone else stop baking and replace it with another neat tradition?

Well it depends on what level of atkins your on. There isn't much on induction apart from cheesecake ive found but there is a lot more on OWL like cookies ect..

I made this my first Christmas season on Atkins by combining the Atkins Revolution Roll recipe with a Cheesecake cream recipe I modified from a Gary Rhodes cookbook.

Low Carb Buche de Noel (Yule Log)

Use the recipe here:Low Carb Atkins Revolution Rolls
Make double the recipe. Add about 1 teaspoon of vanilla extract to the egg-cheese mixture. You may want to add another packet or two of sweetener.
If you want a chocolate log, shift 1/4 cup of unsweetened cocoa powder over the batter while folding in the egg whites.

However, bake it this way:

Grease and line a 15 inch jelly roll pan with butter. Line the bottom with parchment paper and butter well.

Spread the Revolution Roll mixture into the pan, gently nudging it into the corners. Be gentle because you don't want to break down the egg white bubbles.

Bake as directed, until the top is a golden brown. Remove from the oven and cool to room temperature.

Filling:
1/2 cup heavy cream
Sweetner of your choice to taste
4 ounces cream cheese
1 teaspoon vanilla extract or whatever extract you prefer, rum or brandy extract, for example.

Whip the heavy cream with the sweetener until thickened but not grainy. Set aside.

Beat the cream cheese with the vanilla extract until well combined and light. Then fold the cream cheese and whipped cream together.

Assembly:

Remove the Atkins Roll from the jelly roll pan. Trim off the edges. Flip it over and peel off the parchment paper. Replace the parchment on the Roll, and flip over again. Spread the cream mixture onto the roll. Then roll up. Refrigerate.


Note: I never tried making a pumpkin roll. But I'm sure you can do it by substituting pumpkin puree for the whipped heavy cream and add the complimentary pumpkin spices.

I stay away from the sweets and instead do appetizers the are more carb friendly.

Never been much of a baker, but I do find with the holidays that substitution is key. I make chocolate covered chocolate cheesecake bites that are just under a carb each, I like to do a crustless pumpkin pie in little single serving bowls (called ramakens or something like that) and my big thing this year was my ham glaze consisting of brown sugar splenda and caffeine free diet coke. Appetizer is usually meatballs with onion and parmesan cheese in them instead of the bread crumbs and a homemade alfredo sauce with a homemade tomato sauce to dip in, and mini califlower pizzas. See, it is all about substitution and creativity. I bet you can come up with tons of recipes!!!!

what an excellent recipe, Megs

I made it this morning and gave my husband the trimmings to eat as a dessert after lunch. He said 'Is this a normal recipe or are you still on Atkins?' So I count that as a success!!

Here is the recipe for the chocolate cheesecake bites. You can make them with or wihtout the chocolate on top. The carb count depends on how big you make them. I make them in small button type sizes, but I will give the count for the balls.

4oz cream cheese, softened
2T splenda
1T cocoa
Mix and refrigerate about an hour, then roll into balls or desired size. Makes 8 balls at 1.3 carbs each, and a half ounce of cheese in each, a 1/4t of splenda in each. (You can play with the splenda and cocoa to fit your preference. Sometimes I do 2T cocoa and 2t splenda. Just depends on how you want it to taste. I made this recipe without the chocolate coating with 2 ounces cheese to experiment first.)

1/4 square unsweetened chocolate
1 pkt splenda (2t)
1/4t butter
1/4t cream
Melt and cool slightly, it turns back quick. Put each cheese ball on a toothpick and dip in the chocolate. (I like to spoon it over the cheesecake balls and make like a crunchy chocolate coating) Refrigerate until set. New carb count is 1.6c per ball, and new splenda serving per piece is 1t.
