| Heavy cream, simmered down until it is reduced by half. Add whatever seasoning you want to it, after it is reduced. I do this and add grated cheddar to make a very nice cheese sauce. |

| I also like making sauces with cream cheese &/or sour cream as a base.

| i make an alfredo sauce that i ate fairly regularly even before i went on atkins. saute some chopped garlic in a pan w/olive oil. you can do this in your sauce pan and just put everything else on top. sprinkle over it one of those "pre mixed" italian mix spices. let it all sizzle together. if you saute the spices and garlic together in oil before you make any sauce, it will add much better flavor take the pan off the heat and let it cool down for a few mins add room temperature heavy cream and butter. use as much as you want of each depending on how much sauce you want. start w/the cream, then add the butter in for consistency (sorry, i'm really bad at giving recipes bc i'm one of those "throw in this or that to taste" kinda cooks let it simmer together, stir it all and you can add other cheese, whatever kind you like-parmesan, mozzarella, ricotta...check the induction lilst; off the top of my head bc i don't know how much of each are recommended keep stirring and tasting and adding until you have what you want. just remember you can always add more but you can't take out too much
