| Sometimes folks use Parmesan cheese in place of breadcrumb, I wonder if that would work I am not a fan of egg plant, except once in Japan they had some that was soooooo good. Unfortunately I didn't get the recipe |

| Induction legal 'breadcumbing' substitutes are parmesan, crumbled pork rinds or ground flax seeds (or a mixture of them). Or make one of the flax bread recipes and crumble it to make breadcrumbs. Once you are at the nuts/seeds rung of OWL you could use ground nuts as well.

| Here is one recipe that could be easily adapted to induction by omitting the pine nuts and sugar Baked Stuffed Eggplant Recipe

| I fill them with browned ground beef, a little onion, oregano and a couple of tablespoons of tomato sauce. Then top with mozzerella and/or Parmesan. You can do the same with ricotta instead of ground beef when you are allowed soft cheeses. |
