| Omelette? Sausages? bacon, cheese. Try some European sausages, pick up some meats you've never tried before. Scrambled eggs with chives is lovely. Berry's. Kiwi fruit. Sliced turkey? Why limit it just to breakfast things? have what you want when you want...steak, stir-fry, broccolli, quiche... |

| Egg bake. It's really simple,easy, and quick to reheat. Beat up 12 eggs, spray a 9x13 pan with Pam (or other type of nonstick), layer the bottom of the pan with any veggies you like in an omlete and precooked meat (here's where I'm a green/red pepper and onion fan with sausage), pour the beaten eggs over the meat/veggies, cut a bar of cream cheese into 12 pieces and "sprinkle" around the top of the egg mixture. Bake at 375 degrees F for about 25 or so minutes until the middle is firm to touch. You can adjust the time according to your oven...I have several times and it's about 25-30 minutes for my oven. Cool completely if you're not going to eat a piece right away, I can never resist though, and cut into 12 pieces. Store in the fridge with seran wrap on top...or just put pieces in a ziploc or container. It usually takes me and DH about 3-4 days for both of us to eat it. Reheating in microwave depends...1 piece is about 30 seconds in a napkin if your're in a hurry and need to "walk and eat". We like it! See...easy!

| hi.. what sausages are out there that does not have sugar????? I find dextrose in all of them.. Lia

| you can make breakfast quices using a muffin tin. Easy to just grab one and then heat it in the microwave.

| I make something similar to lisa but with spinach. I mix together well: 8 eggs, a cup of shredded swiss or mozerrella or cheddar (or a mix), 1/2 cup flax seed, sauteed onion and garlic, dash of chili pepper (optional) , and 1 very well drained/defrosted package of frozen chopped spinach. You can also mix in a cup or so of sliced mushrooms (i don't like mushrooms) and sprinkle parmesan on top. put in a 9x12 buttered cake pan and bake at 350 for 20-30 mins or until firm. They're quite solid and hold up very well to refrigeration and freezing (and eating by hand!). I actually prefer these cold and at room temp. My stepdaughter loves them too. spinach isn't one of my favourite veggies but i find this a really good way to get in a good amount of it.

| Also, don't feel you need to stick to traditional breakfast foods. You can eat anything that you'd eat at any other meal. I like to make a large dinner so I can save some for breakfast or lunch the next day. If you don't mind a cold breakfast you can have your veggies/dip plus some thin sliced deli meat like turkey and a piece of cheese. I like to make a big bowl of salad that I can snack on over a couple of day that, or course, includes meat and cheese. |

| The other day I beat up about 6 eggs, a bit of cream, added crumbled bacon, green onion, and a bit of cheese and fileld a muffin pan with them. I think I baked it for about 20 min or so, but just check it. Not bad for a first round, and you can freeze it, and it's individual servings for on the go |
