Default artificial sweetneners, jello...etc...

Ok - so I do use a FEW things that have them - jello - the da vinci syrups (has splenda) - I have a bag of xylitol & eyrithritol at home along with splenda...
but i'm doing more research on insulin resistance/metabolic syndrome (which i have) after getting my insulin test back and realizing it's gone UP by 4 points and now I'm at 19 (should be under 10!!)

so I read that people with IR/MS should stay away from artificial sweeteners .
I really want to try and do this and get rid of them out of my diet.

SO - as far as the jello goes -
I know that the book says jello CAN be used, if you're NOT sensitive to aspartame...

I'm beginning to think that I AM - but I LOVE my jello! SO - what is an easy home made version with what BRAND of "generic" geletin?...

In fact the book doesn't mention 'jello' at all

What Dr Atkins does suggest is that we can make a dessert using unsweetened gelatine with splenda. Any brand of gelatine or type of 'legal' sweetener would do the job. I have read that erythritol had the lowest impact on most people.

Actually - in chapter 18 - (page 230 in my book) it does say to "Treat aspartame (NutraSweet or Equal) with caution. Avoid whenever possible. This includes products sweetened with this ingredient, such as diet sodas and diet Jell-O"...

so - of course, I read that as "avoid with caution" - try it and if it doesn't work, then don't do it. and that's just it - i've tried it, but i don't think it works.

That is why as much as i will miss it - i will try to figure out a way to make my own.

keriann, you should read this sentence ""Treat aspartame (NutraSweet or Equal) with caution. Avoid whenever possible. " as this: "Treat cobras with caution. Avoid whenever possible."

I read that the American Diabetes Association recommends that diabetics count 1/2 the number of sugar alcohol carbs. So if smething has 20 sugar alcohol carbs, it should be counted as 10, not 0, because they still have a impact on blood sugar.

yeah yeah yeah - i know - but a LOT of people on these boards eat sugar free jello and they DON'T hinder their weight loss - being that i've ONLY been doing low carb now for 2 months, it is a trial and error for me. i tried it - i've realized it doesn't work. end of story.
and, because i've realized it doesn't work - i need to find what DOES work for me.

i didn't know about the sugar alcohols thing though, as far as counting half. thanks for that info!

Keriann, I know that Linda has a jello recipe or two on her site, but I have not tried them.

Linda's Low Carb Menus & Recipes

I do notice that the jello recipe uses SF kool-aid, and I'm not sure what the ingredients are for that?

You could make your own jello using fresh lemon or lime juice, stevia, gelatin.

I try to stay away from artificial sweeteners, they don't agree with me and I hate the thought of putting that chemically-processed stuff in my body. What's interesting is that I didn't always think that way! I used to think, "Oh awesome, freebie! I can eat this for a fraction of the carbs!" I've found that artificial sweeteners, for me, aren't beneficial in any way. I'm left wanting more, and I don't feel satisfied. If I do sweeten foods, I use stevia, which is natural at least!

thanks for this!!! i just did a google search on sf kool-aid and it too has aspartame.

i wonder if there's any of the generic kinds that do NOT have aspartame...this might be something i will have to search for.
